Giant Winter
Giant Winter Organic spinach was bred specifically for autumn, winter, and early spring harvests. It is the most cold hardy spinach, and will thrive in a winter greenhouse or polytunnel, our outdoors under a layer of mulch. Or direct sow in October and November for a very early crop from February through April. This old heirloom grows to the size of Swiss chard leaves. Its leaves are dark green and slightly savoyed, and vaguely triangular in shape.

Space
Tried and true all-season spinach for babyleaf and bunching. Space organic is a growers’ favorite with its fast growth and good tolerance to both warm and cold temperatures. Thick, medium-dark green leaves are smooth to slightly savoyed with a nice gloss. Vigorous plants hold well without bolting and have an upright habit for easy harvest.

How to grow
Timing: Spinach does best in cool weather. Direct sow late winter to mid-spring, and again from late summer to mid-autumn.
Seeding: Sow seeds 1cm (1/2") deep, 2cm (1") apart, in rows 30-45cm (12-18") apart. Thin plants to at least 5-8cm (2-3") apart, or further if you want larger leaves. Sow deeper in warm soil (where the moisture is). Baby leaf spinach can be sown quite densely with 2 plants for every 4cm (1 1/2")
Growing: Spinach requires rich soil and a fairly neutral pH of 6.0-6.5. Dig 1/4-1/2 cup balanced organic fertilizer beneath each 1m (3') of row. For baby greens, pick when the leaves are 7-10cm (3-4") long. Individual leaves can be picked at any time, until the plant has started to bolt.
